AUVERGNE
A TERROIR IS BORN
With more than 80 Volcanoes over 45 km long, the Auvergne Volcanoes chain offers spectacular landscapes. A preserved nature where a large variety of wild plants abound that we use in our organic Gins & Vermouths recipes.
This high altitude terroir, under the influence of a semi-continental climate, is covered with volcanic soils rich in minerals suitable for growing cereals. We cultivate varieties of Barley and Rye adapted to this mountain terroir.
Auvergne is also renowned for the purity of its waters. 'Guy', my father, who had the gift of water dowsing, discovered several sources around our farm that we still use to make our whiskies.

LA TERRE EN HÉRITAGE
Our estate is nestled in the heart of the oldest mountains in Europe, on a basalt plateau at an altitude of over 1000m.
These fertile black lands, irrigated by pure water from volcanoes, are the ideal place to produce unique, complex, rich and elegant whiskies.
By producing our own cereals on the family farm, we wanted to reveal a unique terroir, that of the Auvergne Volcanoes.

THE FAMILY FARM
La Ferme de Molède
Built in 1848, the "Molède" farm is now home to the 6th generation of the PAGÈS family. Jean-François now manages our farm, which consists of 298 hectares on the 'Planèze' and 120 hectares of mountain pasture. 90% of our land is kept as meadow in order to preserve this fragile ecosystem.
Only 15 ha of land are dedicated to the production of Barley and Rye. We carry out crop rotations every 2 years, no inputs, pesticides, insecticides are used.
We harvest an average of 30 tonnes of mountain cereals per year.
These cereals are then 'Malt' in batches of 6 tonnes at the local malting house before being repatriated to the distillery.

STUPFLER - FRENCH STILL
STAY TRUE
Created in 1925 and labeled “living heritage company”, the Stupfler factory draws on the know-how of 4 generations to create a still that is unique in the world.
This technology combines an open-fire heating system and a column operating on the principle of "partial condensation by controlled cooling".
Offering greater freedom to the distiller, the 'Stupfler' still is ideal for producing "Author" spirits with a characteristic roundness and suppleness.
Whether for Whiskies, Gin or the bases of our Vermouths, the spirits distilled with the Stupfler Still are always very faithful to the raw material used.

ORGANIC GIN & VERMOUTHS
WILD BOTANICAL GARDEN
With an area of 395,000 hectares, the Auvergne Volcanoes is the largest Regional Natural Park in metropolitan France.
Created in 1977, the territory is made up of five natural regions with a very strong identity which are home to extraordinary biodiversity.
This immense and preserved space is the "playground" of local foragers who supply us with most of the plants that make up the recipes for our organic Gins & Vermouths,
